Our WinesWilliam Church 2005 Cabernet SauvignonWe think you will love this premium quality Cabernet sourced from the Conner Lee and Stillwater Creek Vineyards in the Columbia Valley. Very low yields from both vineyards create a concentrated, full bodied wine with a velvety texture that highlights the fresh cranberry and red current fruit flavors. Aged for 22 months in a combination of American and French Oak, small amounts of Merlot and Cabernet Franc add to the overall complexity. Well balanced tannins compliment the long, smooth finish that contributes to the classic Bordeaux style of this wine. 76% Cabernet Sauvignon, 19% Merlot, 5% Cabernet Franc. The 2005 vintage has already been heralded as a spectacular year for Washington wines and this wine is no exception. Our signature use of concrete and stainless steel tanks add to the richness exhibited in this classic Viognier. Pale straw in color this luscious wine is loaded with pear and apricot on the nose complimented by a perfume of honeysuckle floral notes. Medium bodied with flavors of poached pear, peach and a hint of citrus, the wine finishes with nice acidity that is clean and refreshing. The William Church 2005 Cabernet Sauvignon is dedicated to our dear friend Molly Baber who passed away unexpectedly in May of 2004.She is remembered as one of the most fun loving and generous people we have ever known who was a mentor to many and achieved great success in her lifetime.
